Berlinghieri Perricone Organic
Appellation: IGT Terre Siciliane Perricone red wine
Place of production: District of Berlinghieri – Trapani
Grapes: 100% organically cultivated Perricone.
Yield per hectare: Approximately 60 quintals on medium textured soil at 350 meters above sea level
Planting density: 4500 plants per hectare
Harvest period: Hand-picked at the end of September to achieve phenolic and
technological ripeness, using bins of 200 kg.
Winemaking: After being de-stemmed and pressed, the grapes are macerated in steel tanks at a controlled temperature (26 °C maximum) to enhance the immense polyphenolic and aromatic features that this native vine variety has. Then the 50% of the aging takes places in French oak tonneaux of 500 liters and the other part in steel tanks for 12 months. The refinement goes on for 3 additional months before commercialization.

ORGANOLEPTIC PROFILE: The colour is appreciated thanks to its intense ruby red,verging on the garnet with the long refining process. On the nose it shows captivating scents of wild cherry, plums, spices and undergrowth fruits. On the mouth it has a rich, full flavour and excellent savory with a present and well-mantained tannin, a balanced sweetness of the fruit accompanied by a fresh acidity. It goes well with red meats and seasoned cheeses but surprising with modern dishes combined with fish. To be served at the temperature of 16 °C with meat, but at 14 °C with fish.
