Place of production: District of Berlinghieri – Trapani
Grapes: 100% organically cultivated green Grillo
Yield per hectare: 75 quintals on medium textured soil at 300 meters above sea level
Harvest period: Hand-picked in the first decade of August, using bins of 200 kg.
Winemaking: After a short period in the refrigerating room, the whole grapes go through a cold-pressing process, followed by the fermentation at a controlled temperature. After six months of aging on the fine lees, the base is filtered and re-inoculated with certified ORGANIC yeasts and finally subjected to a secondary fermentation inside the bottle. 18 to 24 months “surlie” permanence at a temperature not higher than 15-18 °C, is required in order to obtain a complex and mature sparkling wine. After he disgorgement, 4 additional months will be necessary for our wine to complete its organoleptic process.

ORGANOLEPTIC PROFILE: At sight it has a shiny, straw yellow colour with greenish reflections. Its perlage is fine, constant and persistent. On the nose it is intense with high fruity notes of citrus, cedar, but also bread crust and yeast accompanied by interesting wooden and mineral notes. To the mouth it is dry and soft, particularly fresh and tasty; well bodied and persistent on the palate. Perfect as an aperitif, ideal with fried vegetables, seafood hors d’oeuvres and fish dishes in general. To be served at the temperature of 8 °C
