Appellation: IGT Terre Siciliane Syrah red wine

Place of production: District of Zafarana – Trapani

Grapes: 100% organically cultivated Syrah

Yield per hectare: Approximately 60 quintals on a medium textured soil at 350 meters above sea level

Harvest period: Hand-picked in the second decade of August, using bins of 200 kg.

Winemaking: After being pressed and de-stemmed, the grapes are macerated in steel tanks at a controlled temperature (24 °C maximum), which leads to the noble and elegant polyphenolic extraction and helps to preserve and amplify the aromatic freshness. The aging occurs in 500 liters French oak tonneaux for 14 months, and it continues inside the bottle for 3 additional months before being commercialized.

ORGANOLEPTIC PROFILE: Intense ruby red coloured wine. It has an extraordinary olfactory profile, made of mature red fruits and scents of withered flowers, of sweet spices, balm and vanilla. On the palate it is warm and full, persistent with its mature and fully evolved tannins; its fruity notes well emerge during the tasting. It goes well with vegetable dishes, red meats and aged cheeses.
To be served at the temperature of 16 °C.
