Appellation: IGT Terre Siciliane Inzolia organic white wine

Place of production:  District of Zafaràna – Trapani

Grapes: 90% of Inzolia, with organically cultivated international varieties.

Yield per hectare: Approximately 60 quintals on medium textured soil at 350 meters above sea level

Harvest period: Hand-picked in the second week of  September, using bins of 200 kg.

Winemaking: After 12 hours in the refrigerating room, the grapes are softly pressed in a reducing environment and are left to ferment at a low temperature for about 15 days. The aging occurs  in steel tanks on the fine lees and goes on until the Spring after the harvest, bottling period. Before being commercialized, it benefits from resting for an additional month inside the bottle, enhancing its pleasantness and complexity.

Alcoholic content: 13% vol.

ORGANOLEPTIC PROFILE: Straw yellow coloured wine with greenish reflections. On the nose it is intense and persistent with sweet notes of orange blossom, ripe banana, peach and vanilla in a complex of harmonic olfactory perceptions that underline its freshness and aromatic sharpness. To the mouth it’s fresh with a good extract favored by a good acidity; the strong aromatic qualities are evident and linked to a good savoriness, well equalized by a balanced softness. Suitable for fresh cheeses, fish starters, fish dishes, shellfish, mollusc and fried foods, excellent with anchovy patties. To be served at the temperature of 12 °C
